本品は、次の化学式で表されるアミノ酸である。
溶解性
水1Lに83.4g (25℃), 88.5g (50℃)溶解。エタノール, エーテルに不溶。エタノール、クロロホルムに不溶。水1Lに対し、83.4g(25℃)、88.5g(50℃)水にやや溶けやすく、エタノール及びジエチルエーテルにほとんど溶けない。
解説
L-バリン，(S)-2-amino-3-methylbutyric acid．略号ValまたはV．タンパク質の構成必須アミノ酸として，また遊離の状態で自然界に広く分布している．穀物タンパク質からエチルエステルとして分留，加水分解後，銅塩として単離する．発酵法，α-ブロモイソ吉草酸とアンモニアからの合成法もある．小葉状結晶．融点315 ℃．[α]D26＋33.1°(5 mol L－1 塩酸)．pK1 2.26，pK2 9.49(25 ℃)，pI5.96．弱い苦味がある．D-バリンはアクチノマイシンD，グラミシジンD中に含まれている

2. L-Valine is one of 20 proteinogenic amino acids. Its codons are GUU, GUC, GUA, and GUG. This essential amino acid is classified as nonpolar. Human dietary sources are any proteinaceous foods such as meats, dairy products, soy products, beans and legumes.
Along with leucine and isoleucine, valine is a branched-chain amino acid. It is named after the plant valerian. In sickle-cell disease, valine substitutes for the hydrophilic amino acid glutamic acid in hemoglobin. Because valine is hydrophobic, the hemoglobin is prone to abnormal aggregation.

Valine is an essential amino acid, hence it must be ingested, usually as a component of proteins. It is synthesized in plants via several steps starting from pyruvic acid.
